For organic gardening, soil health is paramount. Soil that has been fed with compost and other natural improvers has loads of friendly bacterias and microbes. It is fertile, has good structure and moisture. Organic plants naturally make more phytochemicals (vitamins and antioxidants) because these help them to defend themselves against bugs and weeds. These vitamins and antioxidants get passed on to you when you eat them.
